Talented girls. I love the “mom and pop” feel carried down by the grandpa. Food looks GOOD. I can’t imagine the level of stress and cunning they must have since keeping a restaurant afloat during COVID must have been brutal. Yes, they are very pretty girls too, and that goes without saying. It matters a bit in restaurants too whether one likes it or not, but can’t deny their talent for food and overall management. Everything matters!

Master of his craft for sure, BUT that Leberkäs/kas (or Fleischkäse/kas if without Liver, though we call that Leberkäs aswell) needs a brown crust on top, makes it more delicious. The Käs/Kas originates from its square bread loaf shape, so for me the boxy shape is a must, the slab just isnt it. Personally wouldnt boil the sausages, apart from the White Sausage, but grill them over charcoal. Non the less, would love to try his sausages, a lot of love and attention to detail goes into them. I wonder why he takes meat with high fat content for his jerky. Its counterproductive since the fat spoils faster than the meat.

A Peter Luger knockoff, but better in every way. Typically Japanese discipline and perfection. I choose BSH over PL any day.
